As the winter's cold begins to loosen its hold on Connecticut, maple sugar makers carefully watch the weather. Their trees, mostly sugar maple (Acer saccharum) and black maple (Acer nigrum) will begin to experience the flow of sap upward from the roots when the daytime temperatures are in the mid-30s, with nighttime temperatures in the mid-20s.
